Ingredients:


- 1 tablespoon vegetable oil

- 1 medium onion, chopped

- 3 cloves garlic, minced

- 2 teaspoons ground cumin

- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground cloves

- 1 can (14-1/2 oz.) diced tomatoes, undrained

- 1/2 cup creamy peanut butter

- 2 tablespoons tamarind paste

- 2 tablespoons brown sugar

- 2 tablespoons cocoa powder

- 1 cup chicken broth

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces


 

Instructions:


1. In a large saucepan, heat the vegetable oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.


2. Add the cumin, cinnamon, and cloves to the saucepan, and cook for 1 minute, stirring constantly.


3. Add the diced tomatoes, peanut butter, tamarind paste, brown sugar, cocoa powder, chicken broth, salt, and black pepper to the saucepan. Stir well to combine. (If you prefer a smoother sauce blend the ingredients once softened and add the peanut butter to taste!)


4. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes, stirring occasionally.


5. While the sauce is simmering, heat a separate skillet over medium-high heat. Add the chicken pieces to the skillet, and cook until browned and cooked through, about 5 minutes.


6. Add the cooked chicken to the saucepan with the mole sauce, and stir to coat the chicken evenly with the sauce. Simmer for an additional 5 minutes to allow the flavors to meld together.


7. Serve the peanut butter mole over rice or with warm tortillas. Garnish with chopped peanuts and fresh cilantro, if desired.
