Ingredients:


For the Chicken Teriyaki:

- 2 boneless, skinless chicken breasts

- 1/2 cup of soy sauce

- 1/4 cup of mirin (sweet rice wine)

- 1/4 cup of sake (rice wine) or substitute with dry white wine

- 2 tablespoons of sugar

- 2 cloves of garlic, minced

- 1 teaspoon of grated fresh ginger

- 1 tablespoon of cornstarch

- 2 tablespoons of water

- 1 tablespoon of vegetable oil


For the Broccoli and Rice:

- 2 cups of fresh broccoli florets

- 1 cup of jasmine or basmati rice

- 2 cups of water

- 1 tablespoon of vegetable oil

- Salt and pepper to taste


Garnish

- Toasted sesame seeds

- Green onions

-Pepper flakes


Instructions:


1. Prepare the Chicken Teriyaki Sauce:

a. In a bowl, whisk together soy sauce, mirin, sake, sugar, minced garlic, and grated ginger.

b. In a small separate bowl, mix cornstarch and water until well combined.

c. Heat a saucepan over medium heat, add the vegetable oil, and then pour in the teriyaki sauce mixture.

d. Bring the sauce to a simmer, then add the cornstarch mixture. Stir continuously until the sauce thickens. Remove from heat.

2. Cook the Chicken:

a. Slice the chicken breasts into thin strips or bite-sized pieces.

b. In a skillet or wok, heat a tablespoon of vegetable oil over medium-high heat.

c. Add the chicken pieces and cook until they are no longer pink and have a golden brown color.

d. Pour the teriyaki sauce over the cooked chicken and stir well, allowing it to simmer for a few minutes to absorb the flavors.


3. Prepare the Broccoli and Rice:

a. Rinse the rice in cold water until the water runs clear.

b. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed.

c. While the rice is cooking, blanch the broccoli florets in boiling water for 2-3 minutes until they are tender-crisp. Drain and set aside.


4. Serve and Enjoy:

a. Plate your cooked rice and broccoli.

b. Top with the flavorful Chicken Teriyaki.

c. Garnish with sesame seeds, sliced green onions, or a sprinkle of red pepper flakes for an extra kick.
