The Best Fijoles Puercos: A hearty and Flavorful Dish

Frijoles Puercos, also known as "Dirty Beans," is a delectable Mexican dish that combines the rich flavors of beans, chorizo, and bacon into a hearty, satisfying meal. This dish is a beloved staple in Mexican cuisine, known for its bold flavors and comforting nature. If you're looking to try something new and utterly delicious, you've come to the right place. In this blog post, we'll walk you through the steps to cook Frijoles Puercos at home.

Ingredients: Before we dive into the cooking process, let's gather all the ingredients you'll need to make Frijoles Puercos: For the Beans:


  • 2 cups of pinto beans

  • 1 onion, finely chopped

  • 3 cloves of garlic, minced

  • 1 teaspoon of salt

  • 1 Can of Pickled Jalapeños


For the Chorizo and Bacon:


  • 1/2 pound of Mexican chorizo (Soy Chorizo is a great substitution)

  • 4 strips of bacon, chopped into small pieces


For Garnish:


  • Crumbled queso fresco (or Oaxaca cheese)

  • Sliced avocado


Now that you have all your ingredients ready, let's get cooking! Instructions: Preparing the Beans:


  1. Start by rinsing the pinto beans thoroughly under cold water. Then, soak them in water overnight. This will help soften the beans and reduce cooking time.

  2. The next day, drain and rinse the soaked beans. Place them in a large pot with enough water to cover them, the finely chopped onion, minced garlic, bay leaf, and a teaspoon of salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if needed.


Preparing the Chorizo and Bacon:


  1. In a separate skillet, cook the Mexican chorizo over medium heat, breaking it into small pieces as it cooks. Once it's fully cooked and slightly crispy, remove it from the skillet and set it aside.

  2. In the same skillet, add the chopped bacon and cook until it's crispy and the fat has rendered. Remove the bacon and drain it on paper towels.


Putting it All Together:


  1. Once the beans are tender use a potato masher or your blender to create a creamy texture while leaving some beans whole. (Spice It Up!: Here is were I would mix in a pickled jalapeno. Remember one can a long way so add to taste!)

  2. Add the beans to the cooked chorizo and bacon, stirring to combine. Let it simmer together for about 10-15 minutes, allowing the flavors to meld.

  3. Serve your Frijoles Puercos hot, crumbled queso fresco, sliced avocado, chopped cilantro.
