The Best Fijoles Puercos: A hearty and Flavorful Dish

Frijoles Puercos, also known as "Dirty Beans," is a delectable Mexican dish that combines the rich flavors of beans, chorizo, and bacon into a hearty, satisfying meal. This dish is a beloved staple in Mexican cuisine, known for its bold flavors and comforting nature. If you're looking to try something new and utterly delicious, you've come to the right place. In this blog post, we'll walk you through the steps to cook Frijoles Puercos at home.

Ingredients: Before we dive into the cooking process, let's gather all the ingredients you'll need to make Frijoles Puercos: For the Beans:

  • 2 cups of pinto beans

  • 1 onion, finely chopped

  • 3 cloves of garlic, minced

  • 1 teaspoon of salt

  • 1 Can of Pickled Jalapeños

For the Chorizo and Bacon:

  • 1/2 pound of Mexican chorizo (Soy Chorizo is a great substitution)

  • 4 strips of bacon, chopped into small pieces

For Garnish:

  • Crumbled queso fresco (or Oaxaca cheese)

  1. Once the beans are tender use a potato masher or your blender to create a creamy texture while leaving some beans whole. (Spice It Up!: Here is were I would mix in a pickled jalapeno. Remember one can a long way so add to taste!)

  2. Add the beans to the cooked chorizo and bacon, stirring to combine. Let it simmer together for about 10-15 minutes, allowing the flavors to meld.

  3. Serve your Frijoles Puercos hot, crumbled queso fresco, sliced avocado, chopped cilantro.
